Cordero in Morong
During Holy Week, on Maudy Thursday, the city of Morong (Rizal) hosts a “cordero procession” in mid-afternoon. The cordero (lamb) is shaped out of a mix of mashed potatoes and kamote (sweet potato). The hermano is chosen yearly. He prepares, organizes and underwrites all expenses which include food for practically the whole town and guests. Thus the hermanos are usually selected from among the community’s affluent.
At about 3 pm, the cordero is carried in a festive procession that starts from the home of the hermano to the church of Morong where the cordero is blessed.
After the blessing and the mass, the lamb is brought back to the house of the hermano where twelve apostles wait. There the cordero is placed on a table, where the hermano cuts off the head of the lamb, which is set aside.
The apostles then eat the lamb and the townsfolk partake in a feast prepared by the hermano's family. The cordero’s head, still on a platter, is then brought by the hermano and his wife to next year’s hermano.

The cooking of the cordero starts the day before at 3 am and will last the whole day. Huge quantities of mashed potatoes are prepared. All this food will be blessed by the priest and almost everybody in town will want some of it afterwards.
